Nets are suspended below the ocean and the nori slowly grows until it is hand-harvested, washed and placed in frames to dry. Low temperatures (below 105 F) and slow drying are essential to retain nutrients. Raw Nori is high in fiber, protein (at 28% more than sunflower seeds) and is an excellent source of calcium, iron, manganese, fluoride, copper, and zinc. Of sea vegetables, nori is among the highest in vitamins B, A, C and E, compared with dairy, seaweed provides up to ten times more calcium and iron by weight.
